The end of the bag lunch?

brown-bag-lunch.jpgToday’s Miami Herald reported some very welcome changes to school cafeteria menus in South Florida.

This school year, the Miami-Dade school district debuted three new vegan options: faux chicken nuggets, veggie burgers and hummus platters. Penny Parham, the director of food services for the school district, reported the new items have been popular among both vegetarians and children who eat meat. In Broward County, veggie burgers are available at schools districtwide, in addition to a hot vegan option once a week.

One student happy with the changes is Ashley Valentín, a senior at Miami Sunset High. She explained to the paper what motivated her vegetarianism, “About two years ago, I started thinking about where my meat comes from,” she said. “I didn’t like the way animals were being treated on some factory farms.”

The directors of food services for both school districts said they are working to add more vegan items on the menu.
