There’s no doubt foie gras is cruel

Yesterday’s St. Petersburg Times featured an article about the many ethical choices facing chefs these days. It’s true that there are many things to think about when choosing what to eat, and some issues are open to debate, but we are certain about one thing — foie gras is a cruel and unnecessary food.
In the article, two Tampa Bay chefs expressed their “who cares” attitude about the suffering of animals. John Harris, the chef at Rusty’s in Clearwater Beach admitted, “I love foie gras.” David Miller, chef at Savant Fine Dining in Clearwater proclaimed, “The duck’s purpose is to be eaten.”
Another chef quoted in the article, Jeanie Roland, who is in charge at Punta Gorda’s The Perfect Caper explained, “This whole foie gras issue has actually been something I personally have given a ton of thought. I use a humanely raised product from Sonoma Valley Poultry.” We truly appreciate her concern, but she has it wrong about foie gras. California’s Sonoma Foie Gras is one of three foie gras farms in the U.S. (the other two are in New York state). Activists who visited the farm found ducks living in filthy sheds, confined in wire cages so small that the birds could barely move. The activists filmed the force feeding process in which long metal pipes are shoved down the throats of birds three times a day. Please contact Chef’s John Harris and David Miller and urge them to join the growing number of establishments that have stopped serving this cruel product. Please also contact Chef Roland and thank her for the thought she has put into her decision to serve foie gras, but ask her to take a closer look at Sonoma Foie Gras.
